Blueberry Goodness...

It's summer time and that means one thing, fresh fruit and veggies! I love getting fresh fruit and snacking on  it all day long. One of my favorite things to snack on are fresh blueberries! Growing up,one of my favorite things to eat when I would go visit my grandparents was MommaBillies homemade blueberry muffins. They were SO good! Of course, nothing ever beats homemade, but the muffins were so good that I could eat a dozen in one setting! Since then, I have inherited Mommabillies famous recipe and I wanted to share it with you. I hope you enjoy the muffins as much as my family does! Happy eating!


Frozen Blueberry Muffins
4 cups of flour
4 tsp baking powder
1/2 tsp salt
1 cup butter- softened
4 eggs
1 cup milk
2 tsp vanilla extract
2 cups frozen blueberries- you can freeze fresh blueberries and use them as needed


In a large bowl, combine the flour, baking powder, and salt. In a mixing bowl, cream butter and sugar. Add eggs, milk and vanilla- mix well. Stir in dry ingredients just until moistened. Fold in blueberries. Fill greased muffin cups 2/3 full. Bake at 375 for 20-25 mins. This usually make 2 dozen muffins. I like to make a batch and freeze them and when we want one or more then all we have to do is heat and enjoy!
